Glutathione (GSH) is a tripeptide made from three amino acids: glutamate, cysteine, and glycine. The cysteine provides the SULFUR that makes the molecule work. Glutathione conjugates (binds to) heavy metals and foreign compounds, making them water-soluble so your kidneys can excrete them.
Every cell in your body produces glutathione. It is your primary defense against oxidative stress and toxic metal accumulation.
What feeds it: Sulfur-rich foods. Garlic, onions, leeks, broccoli, cabbage, cauliflower, mustard greens. These have been staple foods in every traditional cuisine on earth for thousands of years.
What depletes it: Chronic toxic metal exposure (uses up glutathione faster than it regenerates), processed food lacking sulfur compounds, sedentary lifestyle (reduces sweating excretion pathway).
NRF2 is a transcription factor that lives in your cells. When activated, it moves into the nucleus and turns ON the genes that produce glutathione and Phase II detoxification enzymes. Carbon and ceramic filters remove chlorine and most aluminum residue. Good. But they don't restore stripped minerals. Reverse osmosis removes 95-99% of everything: 97% of calcium, 96% of magnesium, all silica. WHO (Nutrients in Drinking Water, 2005) found populations on demineralized water had higher cardiovascular mortality. Recommended minimum 10 mg/L magnesium.
